| 2 | pounds boneless pork loin - cut in 1" cubes |
| 3/4 | cup onion - chopped |
| 2 | tablespoons olive oil |
| 1 1/2 | teaspoons salt |
| 1 | teaspoon pepper |
| 2 | cloves garlic - minced |
| 3 | carrots cut in chunks |
| 3 | potatoes - cut in 1" cubes |
| 3 1/2 | cups chicken broth |
| 1 | cup water |
| 10 | tablespoons chile ginger sauce |
| Season pork with salt and pepper. Brown pork, onion, and garlic in oil. | |
| Place pork, onions, garlic and any pan juices in crock pot. Add potatoes and carrots. | |
| Cook on medium heat for 7-10 hours until pork and potatoes are tender. | |
