Pork Stew

2 pounds boneless pork loin - cut in 1" cubes
3/4 cup onion - chopped
2 tablespoons olive oil
1 1/2 teaspoons salt
1 teaspoon pepper
2 cloves garlic - minced
3 carrots cut in chunks
3 potatoes - cut in 1" cubes
3 1/2 cups chicken broth
1 cup water
10 tablespoons chile ginger sauce
 
• Season pork with salt and pepper. Brown pork, onion, and garlic in oil.
 
• Place pork, onions, garlic and any pan juices in crock pot. Add potatoes and carrots.
 
• Cook on medium heat for 7-10 hours until pork and potatoes are tender.
