| 2 | Pounds Fish - Skinned, boned, and cut in bite size pieces. |
| Oil (for deep frying) | |
| 1 1/4 | Cups Spicy Flour Mix (see recipe below) |
| 2/3 | Cup Cornstarch |
| 3/4 | Cup All-purpose Flour |
| 1 1/2 | Cups Cold Water |
| 2 | Egg Whites - Lightly Beaten |
| 1 | Bottle Chile Ginger Sauce by Chile Chile Bang Bang |

Combine 1 1/4 cups Spicy Flour Mix with cornstarch and 3/4 cups All-purpose Flour. Stir well to blend all the dry ingredients. |

| Add the slightly beaten Egg Whites, cold water and blend well. | |
| Add fish and gently stir until the fish is well coated. | |

Heat oil in deep fryer over high heat. Scoop fish pieces from the batter a few at a time. Deep fry until golden and completely cooked; approximately 5 to 8 minutes. |

Drain on paper towels. Place in warm oven to keep warm while frying the rest of the fish. |

|
Place Chile Chile Bang Bang Chile Ginger Sauce in individual sauce bowls for each person, so they can dip their fish in the sauce. |

| 2 | Cups All-purpose Flour |
| 4 | Teaspoons Salt |
| 2 | Teaspoons Cayenne Pepper |
| 2 | Teaspoons Black Pepper |
| Combine the flour with salt, cayenne pepper and black pepper. Stir well. | |

You will have some Spicy Flour Mix left over after making the Batter Fried
Fish with Chile Ginger Sauce. Place this left over flour mix in an air-tight
container. Use this flour mix instead of regular flour the next time you make gravy for your roast beef, pork roast, chicken or turkey. |
